Sponge Cake with Fresh Peaches

Fresh peaches are a big hit at our house. John and I were both raised with peach trees in our yards and every summer enjoyed them fresh off the tree. Here is one of our favorite fresh peach dishes.

                                                                        

1 cup flour
1 tsp baking powder
1/4 cup milk
2 tbsp butter
2 eggs
1 cup sugar
1 tsp vanilla
Heat milk and butter until butter melts. Beat eggs at high speed until thick (about 3 minutes). Gradually add sugar while mixing and beat 4-5 minutes longer. Sift together the dry ingredients.  Add to egg mixture until just blended. Stir in the hot milk and vanilla, mix well. Pour batter into a greased and floured 9 X 9 X 2 inch baking dish.  Bake at 350 degrees for 25-30 minutes. When cool cut into 9 squares.  Cut a square in half crosswise and open flat. Top with fresh peaches and whipped cream.  It is also delicious topped with a scoop of vanilla ice cream and the smothered with fresh peaches.
