Chocolate Snack Cake


Our family has been enjoying this easy stir together cake for 25 years. It will probably take more time getting the ingredients out of the cupboard than it takes to stir it together. Another favorite “Chocolate Cake” that is always moist and hard to stop eating.

Chocolate Snack Cake

3 1/4 cups flour
2 cups packed brown sugar                                                                
1/2 cup cocoa
2 tsp baking soda
1/2 tsp salt
2 cups water
2/3 cup canola oil
2 tsp vinegar (I use red wine vinegar)
1 1/2 tsp vanilla
3/4 cup semi sweet chocolate chips

Grease and flour 9″ X 13″ baking pan. In a large mixing bowl sift together the dry ingredients. Stir in the brown sugar. Add water, vinegar, oil and vanilla whisk together until smooth.  Pour into prepared pan and sprinkle the top with chocolate chips. Bake at 350 degrees for 30-40 or until a tooth pick comes out clean.

Gluten free variation:

Replace the flour with rice flour, decrease the water by 1/2 cup and add 3/4 cup applesauce.
